The Lacandon Jungle is one of the most biodiverse rainforests in the world. The Lacandon in Chiapas, in southern Mexico, is home to ancient Mayan cacao. The cacao trees grow amidst dense, verdant, lush, vegetation. The cultivation and harvesting of the cacao is carried out by the Jimenez family according to a revered method that follows the rhythm of the moon phases. The fermentation in red cedar containers and sun drying keep the flavors of this native cacao alive. With gentle roasting, the cacao transforms into a chocolate that has a very light tone.
