The turtle is a stunning, amazingly complex creature. Enduring from our prehistoric past, it is known to have inhabited the sea’s depths while dinosaurs reigned colossal over 200 million years ago.

Belize offers a nesting ground for several species, each of their names conjuring an image of the features that distinguish one from the other: Green, Hawksbill, Leatherback, Loggerhead—they traverse the Belizean coast, a hard-wrought elegance in their seeming imperturbability as they navigate their under-water course.

The moon provides a beacon of sorts, its light illuminating an ancient, sacred path: the female turtle crawls ashore, crossing stretches of glowing white sand to dig a teardrop-shaped nest with her flippers, where she will lay between 100 and 150 eggs before returning to the sea.

After a number of weeks, the tiny hatchlings begin to emerge. As though guided by some primordial memory of the tides, they embark upon a tireless journey to take their first sea-borne breath.

We can’t help but think of the greater forces that give rise to it all: the ocean a vast, undulating mirror holding the sky, its ebb and flow linked to the moon, and perhaps, to something written long-ago in the constellations. It is a thing of awe.

As always, it is our privilege to bear witness to yet another marvel of nature. Belize is known, too, for its cacao, the history of its cultivation by indigenous Maya farmers dating back centuries. It is these same traditions of permaculture that sustain the crop today, resulting in a cacao so beautifully inextricable from its land and culture. Find it brought-forth here in our 72% dark bar, its notes of pineapple, tobacco, and vanilla speaking to past, present, and future at once.
