Bordering a 1,019 acre bird sanctuary in the northern mountains of the Dominican Republic is the pristine, flourishing environment of Zorzal cacao. Zorzal translates from Spanish to the word 'thrush,' as the legacy of this cacao's cultivation is named in honor of a migratory songbird called 'Bicknell's Thrush.' We make every effort to coax out the pure, unaltered taste of the cacao as it has been created by nature.
Embodying a gentle bitterness, this unsweetened chocolate reveals notes of walnut, caramel, and tart cherry. So taken by this raw 100%, we cave-aged it with select ingredients, permitting the aromas to delicately infuse the chocolate and impart a natural sweetness. A little bird told me that these chocolates deliver a delicious tasting experience and may even inspire you to belt out a tune.
