In Indonesia, where the hives of wild bee colonies hang from sacred, towering trees, honey is harvested at dizzying heights in an ancient practice called Menumbai Pelalawan.
It begins with the building of a hand-made ladder of bamboo branches joined by rattan. One person, the meo one, ascends the ladder, sometimes upwards of 250 feet above the ground, while another, the meo menesat, sings from below. Tender, worshipful intonations float sky-ward: songs that blend mantras and rhymes in honor of the trees, the honeybees, and the spirits that inhabit all living things.
Using a smoker made from the dried roots of the star-anise tree, the hunters lull the bees into a state of calm, then slice the honey-filled wax-combs from the tree, always leaving a portion of the honey for the bees to ensure their continued growth and survival.
Our Indonesia bar carries notes of passion fruit, orange panna cotta, and lightly toasted almond. In the journey of its making, we sing praises throughout: of the farmers who have cultivated the cacao through hand-harvesting, fermentation, and sun-drying, and of the land that nurtures its abundance.
